Con motivo de las fiestas patrias en varios paises de latinomerica y celebración del mes de la hispanidad en los Estados Unidos, uno de mis supermercados favoritos, Fresh & Easy, preguntó a varias mamas blogueras si podíamos hacer algunos platillos típicos de nuestros países para ser publicadas en su blog "Tu Cocina Fresh & Easy".
Con mucho gusto les informo que mi receta fue aceptada y publicada. Hice enchiladas verdes de pollo, la receta la pueden ver en español en el blog de Fresh & Easy aquí. (o en Inglés en la parte de abajo de este artículo) Espero que les guste.

Fresh & Easy wanted to celebrate Hispanic Heritage Month with food! So they asked some bloggers to submit their favorite recipes from their countries to be published in the new Spanish Fresh & Easy blog "Tu Cocina Fresh & Easy" ("Your Kitchen Fresh & Easy).
I'm happy to tell you my recipe was accepted, published, and you can see it here, in Spanish, of course! But don't worry if you don't read Spanish I will write it out in English for you right now.
4 chicken thighs, cooked and shredded.
1 pack F&E corn tortillas
2 bottles F&E salsa verde
1 bottle crema mexicana
1 Cacique Queso Fresco, crumbled
2 cans Rosarita refried beans
1/2 small onion, chopped
1 Tablespoon vegetable oil
2 teaspoons salt
1 bay leaf
2 teaspoons dry oregano
Heat the salsa verde in a wide pan. Warm 12 corn tortillas using a comal or a microwave (10-12 sec per tortilla if using microwave).
Heat vegetable oil in a separate pan and cook onion until soft (3 min). Add the beans, salt, bay leaf and oregano. Cook over medium heat for 10 minutes. Discard bay leaf.
To assemble, take the warm tortillas one by one, dip them in the salsa so that they are completely covered, fill them with the shredded chicken, roll them and put them on a plate. Cover with the remaining salsa, pour the crema mexicana on top to taste and sprinkle on the crumbled cheese.
Serve immediately accompanied by the refried beans. Enjoy!
