Como pelar chiles poblanos / How to peel poblano chiles

ENGLISH AND SPANISH VERSIONS TOGETHER

Chiles rellenos es una de las recetas mas conocidas en la cocina mexicana, no es difícil es sólo un poco laboriosa. Existen muchas variaciones de los chiles rellenos y en Septiembre es muy común ver Chiles en Nogada, los cuales son deliciosos. Tengo la receta para ustedes, pero antes quisiera escribir este artículo para mostrarles como como pelar los chiles poblanos.

Chiles rellenos is one of the most popular recipes in Mexican Food. They are not difficult to make, but they do take time. There are a lot of chiles rellenos variations and a very popular September variation is called Chiles en Nogada, a delicious recipe I will share with you shortly. But beforehand I would like to show you how to peel the chiles poblanos.

Necesitas:
  • Chiles poblanos (exactamente los de la foto), en algunas partes de Los Estados Unidos, les llaman pasilla (no se la razón de esto), así que checa bien la foto para evitar confusiones.
  • Tu estufa
  • Una servilleta de tela o toalla de cocina de algodón
  • Una bolsa de plástico de tamano suficiente para poner los chiles en ella. Por favor cerciórate que no tenga ningún agujero
You will need
  • Chiles poblanos, please check the picture carefully, for some reason in some parts of The United States, they are called "pasilla"
  • A range
  • A cotton towel big enough to hold the chiles
  • A plastic bag big enough to put the chiles inside. Please be sure there are no holes in it.
Procedimiento
  • Si tienes estufa de gas, lo mas fácil es que prendas uno de los quemadores y pongas los chiles directamente en el fuego, cambiándolos de posición cada vez que un lado se haya asado.
  • Si tienes estufa eléctrica, como yo, ponlos en una charola para hornear, prende el asador de tu horno y mételos cuando este bien caliente, cámbialos de posición cada vez que un lado se haya asado.
Process
  • If you have a gas range, the easier thing is to put them directly to the flame, turn them as soon as they are "grilled" on one side.
  • If you have an electric range, like me, put them on an oven safe sheet, turn on the broiler and put them under it when it is very hot. Turn them as soon as they are "grilled" on one side.

Los chiles asados lucirán así. They will look like this.


Ponlos sobre la servilleta de tela, cúbrelos, e introdúcelos en la bolsa de plástico. Cierra bien la bolsa y déjalos reposar por 10 minutos, para que "suden".

Put them on the cotton towel, close it and put them in the plastic bag. Close the bag really well and let them rest for 10 minutes, so they can "sweat."




Saca un chile de la bolsa y jala la piel, verás que se desprende muy fácilmente. Cuando acabes con uno, continúa con el otro, cerrando la bolsa cada vez que lo hagas. Es importante no dejar que los chiles se enfríen ya que será difícil pelarlos.

Take one chile from the bag, pull the skin off, it should come off easily. When you finish with one chile, continue with another. Close the plastic bag well after you take one out. Please don't allow the chiles to get cold, if that happens, it could be more difficult to peel.


Ya pelados, toma uno a uno, haz un corte a lo largo y extrae las semillas y venas.

Finally, make a vertical cut and take the seeds out.


Es todo! That's it!

Nota: yo estoy acostumbrada a hacer todo el procedimiento sin cubrirme las manos, es mucho mas fácil para mí, sin embargo, es posible que los chiles estén muy picantes y te ardan las manos. Puedes proteger tus manos ya sea bañándolas en aceite antes de empezar, o usando guantes delgados de plástico. Y por favor, procura no tocar tus ojos con tus manos, he?

Note: I used to do the whole process without covering my hands, it is a lot easier for me; however, when the chiles are very hot (spicy), they will burn your hands. To protect your hands you can cover them with oil beforehand or you can use thin plastic gloves. Be mindful of keeping your hands away from your eyes, eh?

  1. Oh thanks for posting this! I have a big bucket of chiles here and wasn't sure what I was going to do with them. One of my fondest memories of living out west was smelling the chilies roasting.

  2. Mozer, You're welcome! I love poblano chiles and I love the aroma too! I make a bunch for my Chiles en Nogada, but I left some to make Rajas con Crema y Elote, one of my favorite dishes :)

  4. EEEEEhhh muchas gracias Silvia, la verdad es que se me olvidaba lo de la toallita poreso no podia pelarlos y se pegaban al plastico.
    jajajajajjaja

    gracias por tan buenos consejos ,hace tiempo que estoy tratando de asar y pelar los chiles pero nada me resulta
    intentare con tu metodo que parece divino,

    asi uno comprende mejor !
